Besides a DSLR, what is dutiful camera that's not too "fancy"?
A camera that is affordable but great quality and features, but nil too fancy like a DSLR (when I say "fancy" I lately mean something like a professional photographer's camera)! :P

Nikon and Canon are both excellent cameras next to a broad parallel product range. My general counsel is to research the features and price range, then dance to a camera store and handle the cameras for a while. Pick the one which feels most comfortable.
I don't enjoy the knowledge to comment about the Canon product dash, Nikon D90, D5000 are nice prosumer cameras.
This is a perfect camera for what you're looking for! The Canon Powershot sx20is. I've used it, and the pictures were wonderful. The flip out eyeshade was much handier than I though it would be, and the body is more or less close to that of a dslr. It's got a good solidity to it with the batteries surrounded by, as well.
